Carrot Cake Energy Bites

These are seriously so addicting! I run with my friends most morning and my husband does brazilian jujutsu and having a good post snack like this for us fuel our bodies afterwards is so nice and something about these being in the freezer makes them that much sweeter because it’s refreshingly cold to help beat the summer heat! Just be sure that when you want to eat them, leave ’em out on the counter for a few minutes so that they thaw out a bit!

EVERYTHING YOU’LL NEED TO MAKE THESE carrot cake energy bites

  • Carrots: adds a natural sweetness to the energy bites, plus carrots are high in vitamins with the ability to boost your immune system, help your eyesight and lower your cholesterol and diabetes risk.
  • Peanut Butter:
  • Oat Flour: this fiber-rich grain is lower on the glycemic index! If you don’t have oat flour, you can easily make it using rolled oats. You take your rolled oats and blend them into a fine powder. If you’d like to watch a demo you can check out my how-to video on instagram here.
  • Nuts: provides a great source of heart-healthy fats, amino acids, and minerals! You’ll want to chop these up fine!
  • Sweeteners: instead of using processed sugar, these energy bites are naturally sweetened with maple syrup and a ripe banana.
  • Chia Seeds: I really enjoy adding chia seeds to anything I can because they are full of health benefits! Just to name a few, they help reduce blood pressure, lower cholesterol levels, support digestive health and reduce inflammation!
  • Cinnamon: adds that familiar carrot cake spice!
  • White Chocolate: I like to drizzle the chocolate on top instead of add it into the bites themselves because I appreciate how quickly the chocolate melts in your mouth when you drizzle versus when you put the chunks into the energy bites. Plus it’s just so pretty when drizzled on top!

Carrot Cake Energy Bites

I have been wanting to have more healthy snacks around the house for my husband and I and these are perfect! The banana adds this super chewy, delicious texture to energy bites when you freeze them, I wanna say almost like a truffle. These are seriously so addicting! Ingredients  

  • 1 ripe banana, mashed
  • 1/3 cup peanut butter
  • 2 cups oat flour if you don't have, blend rolled oats
  • 1/2 cup pecans or walnuts, finely chopped
  • 1 tsp ground cinnamon
  • 1/4 cup maple syrup
  • 1/4 cup unsweetened shredded coconut
  • 2 Tbsp chia seeds
  • 1/4 tsp salt
  • 1 cup shredded carrots (about 2-3 carrots)

Drizzle

  • 1/4 cup white chocolate
  • 1 tsp olive oil

Instructions 

  • Mix all your ingredients together (besides the ingredients for the drizzle) in a bowl until just combined.
  • Use a medium cookie scoop to grab the dough and roll into balls. You should get about 18 balls. Place them on a baking sheet lined with parchment paper and place in the freezer 30 minutes.
  • Add your white chocolate and olive oil to a microwave safe bowl. Microwave for 30 second intervals until your chocolate has melted. Drizzle over the balls, and place back in the freezer for at least 10 minutes.
  • When you want to eat them, set them out for a few minutes before to thaw a little. Place in an airtight container in the freezer. These last up to 3 months.
