Honey Spam Musubi

I have very fond memories of eating spam musubi made by my husband’s mom (Mama Wong) when we went on adventures around town. Spam musubi is quick, delicious and easy to pack up and take to-go.

EVERYTHING YOU’LL NEED TO MAKE HONEY SPAM MUSUBI

  • Spam: the core of this dish! Spam is a fatty meat that provides wonderful fat and flavor!
  • White Rice: when you’re making this, do NOT skimp out on adding the right amount of water. You will want to make sure this rice is sticky and not dry or it will not form into the shape it should. In this case, more water is better than less.
  • Nori: this dried seaweed will get soft when wrapping around your hot rice & spam. If the end of the nori sheet aren’t sticking, wet your finger and apply more water to them.
  • Honey: is mineral rich and lower on the glycemic index than other refined sugars. Usually musubi uses brown sugar, but we try to avoid adding refined sugars if we can.
  • Low Sodium Soy Sauce: spam has a lot of sodium so we opt in to use a low sodium soy sauce for this dish.
  • Mirin: is a type of rice wine that is fermented and adds an umami taste.
  • Sesame Oil: provides a distinct and strong nutty taste to the dish.

Honey Spam Musubi

Ingredients  

  • 1 12oz can spam, cut into 8 slices
  • 2 cups white rice better to add more water than less when cooking so rice is sticky and holds its shape
  • 3 sheets nori seaweed sheets, cut into 8 strips

Sauce

  • 2 Tbsp honey
  • 1.5 Tbsp low sodium soy sauce
  • 1 Tbsp mirin
  • 1/2 tsp sesame oil

Instructions 

  • Start your rice cooking in your rice cooker.
  • Cut the can of Spam into 8 slices. (Rinse out your Spam can and set aside to dry, we will use this as our mold later on).
  • Make your sauce by mixing all of your sauce ingredients together until combined
  • Pan fry your Spam slices until they begin to change color, then top the spam with some of the sauce. Flip the Spam slices and then top with more of the sauce. Keep repeating this until all of the sauce is on the Spam. Then remove from heat.
  • Line your Spam can with plastic wrap.
  • Place 1/4 cup of rice into the lined can and a slice of Spam on top of the rice. Make sure to push the rice and the Spam down tightly. This will help ensure that the musubi comes out looking like musubi. Lift the plastic wrap out of the can and place it on top of one of your nori sheet slices. Wrap the slice of nori around your musubi. Repeat until all your Spam is made.
