My husband and I went fig picking last week, which fruit picking in general is one of my favorite things to do by the way, and now we have been eating this bread topped with fig, feta, thyme and honey on repeat! It’s one of those simple bites I feel like where everything just makes sense, plus it’s seamlessly beautiful for the amount of effort you put into making it!
Everything you’ll need to make this Figs & Honey Bread
- Bread: we make a honey nut bread for these! I enjoy making the bread because then I can do half all purpose and half oat or whole wheat flour to help lower the glycemic index.
- Figs: these are sweet like jam! If you’re picking your own from a public tree like my husband and I did, look for the ones that are drooping and are softer. These are going to be the sweetest! They’re also packed with fiber, vitamins and minerals!
- Feta Cheese: adds a creamy, salty flavor that pairs really well with the sweetness of the figs!
- Thyme: provides an almost minty sweet flavor which ties it all together! The first time I made these we actually didn’t include the thyme, but the second time I added it and we decided it tasted better with it!
- Honey: this is a staple in the Wong household. Honey is mineral rich and is lower on the glycemic index. Plus it enhances the sweetness of the figs!
Figs & Honey Bread
My husband and I went fig picking last week, which fruit picking in general is one of my favorite things to do by the way, and now we have been eating this bread topped with fig, feta, thyme and honey on repeat! It's one of those simple bites I feel like where everything just makes sense, plus it's seamlessly beautiful for the amount of effort you put into making it!
Ingredients
- bread, of choice
- figs
- feta cheese
- thyme, dried or fresh
- honey, drizzle
Instructions
- Put butter on your slices of bread and toast them.
- While your bread is toasting, cut up your figs. I cut ours into quarters but feel free to do whatever you feel you'd enjoy the most.
- Once bread is toasted, begin assembling (it's seriously that easy). Add your figs, feta cheese, thyme and then drizzle with honey. Enjoy!
