Sunflower Tomato Feta Dip

I made this for our small group at church and they devoured the entire dip! This is super quick to make and full of flavor which is right up my alley when it comes to cooking. You simply blend everything together! I was inspired to make this recipe when my friend let me try this delicious sunflower pesto she got from a farmer’s market and I kept thinking about how good it was!

EVERYTHING YOU’LL NEED TO MAKE this sunflower tomato feta dip

  • Sunflower Seeds: give this dip a hummus-like quality with their earthy flavor! Sunflower seeds are also rich in vitamin E, selenium, magnesium, protein and unsaturated fatty acids that may lower inflammation, blood pressure and blood sugar. 
  • Tomato Paste:  its concentrated taste adds body to the dip!
  • Olive Oil: gives richness to the dip and a bonus!! It has anti-inflammatory properties (they even conducted a study that showed that 2 Tbsp of olive oil can fight inflammation better than a dose ibuprofen)!
  • Red Pepper Flakes: I like it a lil spicy!
  • Garlic: oh garlic in anything is absolutely delicious! Even the smell alone lets you know what you’re about to eat is gonna be good! We use a lot of garlic because 1) we really like garlic and 2) we have yet to hear someone say a dish had too much garlic!
  • Basil: this adds a slightly sweet and peppery flavor to the dip and I like to put it in the dip as well as on top of it to provide some added color!
  • Lemon: brings needed brightness to the dip!
  • Feta: sprinkle this on top to add creamy tangy goodness!

Sunflower Tomato Feta Dip

Ingredients  

  • 1 1/2 cup water
  • 1/2 cup sunflower seeds
  • 1 6oz can tomato paste
  • 2 Tbsp olive oil
  • 1 tsp red pepper flakes
  • 3 garlic cloves
  • 4 basil leaves
  • 1 lemon, juiced
  • couple pinches of salt
  • black pepper, ground

Toppings

  • basil, cut into strips
  • feta
  • salt

Instructions 

  • Put all of your ingredients into a blender or food processor in order and blend until smooth.
  • Top with basil, feta and salt and then serve with bread or crackers.
