Simple Chicken Enchiladas

This is one of our go-to simple and delicious dinners for when we have guests over! We came up with this recipe when we were trying to find ways to rehydrate our day old costco chicken and let me tell y’all….it does not disappoint! The cooked jalapeno chili sauce is spicy but not too spicy and it’s so easy you’ll be making this for all your friends and family stress-free!

EVERYTHING YOU’LL NEED TO MAKE THESE SIMPLE CHICKEN ENCHILADAS

  • Onion:  rich in vitamin B and antioxidants, onions are known for their ability to fight inflammation! Plus onions provide a ton of flavor, which makes sense because they’re in the same family as garlic.
  • Jalapeno: provides those spicy (but not too spicy) notes you won’t want to miss! If you’re afraid of spice, my mom eats these and likes ’em and she doesn’t like spicy food. So this adds more spicy flavor than a numbing tastebuds kind of spice.
  • Garlic: these provide a pungent flavor that mellows and sweetens when cooked.
  • Spices & Green Chilies: add flavor complexity to the dish.
  • Rotisserie Chicken: we get the $5 chicken from Costco for this, which makes it a great budget-friendly meal. However, any rotisserie chicken will work! Just make sure to shred it up finely. The more shredded the chicken is the more the cream cheese will moisten it. I’ve noticed if I don’t shred it enough it doesn’t taste quite as good, so shred that chicken!
  • Cream Cheese: this is going to bring your dry chicken back to life!
  • Tortillas: my husband and I get the ones you cook on the stove to make “fresh” and we love ’em! I’m sure you could use just normal tortillas as well but if you have the kind you can cook yourself I highly recommend it!
  • Cheese: topping with cheese is a staple for enchiladas.

Simple Chicken Enchiladas

Ingredients  

Sauce

  • 1 small yellow onion, diced
  • 1 Jalapeno, seeds removed & cut in chunks
  • 4 garlic cloves
  • 1 cup water
  • 1 7oz can of diced green chilies
  • cumin
  • salt
  • black pepper, ground

Enchiladas

  • 1/2 rotisserie chicken, shredded We get the $5 Costco one
  • 1 8oz cream cheese, cut into cubes
  • 1 7oz can green chilies
  • 10 tortillas we like to get the ones you cook at home because they taste so fresh
  • shredded cheese blend

Instructions 

Sauce

  • Heat oil in a sauce pan over medium-high heat. Add in your jalapenos & onions. Cook until the onions are translucent. Add in your garlic and cook until very fragrant.
  • Transfer your onion mixture to a blender. Add water, green chilies, cumin, salt (generously), & black pepper. Blend until smooth & taste to season to your liking.

Enchiladas

  • Preheat your over to 400F. Spray a 13"x9" glass baking dish with cooking spray.
  • In a skillet reheat your rotisserie chicken if cold and add in your cream cheese and green chilies. Cook until incorporated well and the cream cheese is melted.
  • Spoon chicken filling into tortillas; roll up & place them seam side down into a baking dish.
  • Top with sauce & shredded cheese then bake for 15-20 minutes.
