Everything you’ll need to make these delicious Breakfast cookies
- Almond Flour: be sure to pack your almond flour when making these! Almond flour will provide a rich moisture to these cookies so I do not recommend subbing this for any other flour. It is also a low glycemic index food and even has fewer sugars and carbohydrates when compared to whole wheat flour.
- Rolled Oats: this fiber-rich grain is lower on the glycemic index and helps it taste like an oatmeal cookie
- Baking Staples: don’t forget the baking soda and salt. These are gonna help our cookies to cook properly.
- Chia Seeds: I really enjoy adding chia seeds to anything I can because they are full of health benefits! Just to name a few, they help reduce blood pressure, lower cholesterol levels, support digestive health and reduce inflammation!
- Sweeteners: instead of using processed sugar, these cookies are naturally sweetened with honey and a ripe banana.
- Butter: believe it or not butter is actually a healthy fat! Butter is high in fat-soluble vitamins, including vitamins A, E, and K. Vitamin K is an essential nutrient for helping the body absorb calcium!
- Chocolate Chips: provide that melty pull-apart cookie goodness when they’re right out of the oven!
- Unsweetened Shredded Coconut: coconut adds so much depth and flavor to these cookies! It’s also really good for you in that it is high in vitamins and minerals!
Chocolate Chip Oatmeal Breakfast Cookies
If you like chocolate chip oatmeal cookies, you're gonna LOVE these!! They're chewy, delicious & healthy!! They'd be perfect for breakfast, snacks and even when you're feeling a sweet treat!!
Ingredients
Dry
- 1 1/4 cup almond flour, packed
- 1 cup rolled oats
- 1/4 tsp salt
- 1 tsp baking soda, break any clumps in your hand before adding
- 2 Tbsp chia seeds
Wet
- 1 egg
- 2 Tbsp honey
- 1 medium banana, mashed
- 2 tsp vanilla
- 1/4 cup butter, melted & cooled
- 1/3 cup chocolate chips
- 1/4 cup unsweetened shredded coconut
Instructions
- Preheat your oven to 375F. Line a baking tray with parchment paper.
- Whisk flour, oats, salt, baking soda and chia seeds together in a large bowl.
- In a separate bowl, whisk together egg, honey, mashed banana, vanilla, and butter. Add in your chocolate chips and coconut flakes.
- Mix your wet into your dry ingredients and stir until well combined.
- Scoop out with a medium size cookie scoop onto baking tray lined with parchment paper.
- Then gently flatten the cookies with the palm of your hand so that they're about 1/4 inch thick.
- Bake 12-14 minutes. Let cool on a wire rack and enjoy!
