Chocolate Chip Oatmeal Breakfast Cookies

Ingredients
Dry

almond flour, packed

rolled oats

salt

baking soda, break any clumps in your hand before adding

chia seeds
Wet

egg

Tbsp
honey
1
medium banana, mashed
2
tsp
vanilla
1/4
cup
butter, melted & cooled
1/3
cup
chocolate chips
1/4
cup
unsweetened shredded coconut
Instructions
Preheat your oven to 375F. Line a baking tray with parchment paper.
Whisk flour, oats, salt, baking soda and chia seeds together in a large bowl.
In a separate bowl, whisk together egg, honey, mashed banana, vanilla, and butter. Add in your chocolate chips and coconut flakes.
Mix your wet into your dry ingredients and stir until well combined.
Scoop out with a medium size cookie scoop onto baking tray lined with parchment paper.
Then gently flatten the cookies with the palm of your hand so that they're about 1/4 inch thick.
Bake 12-14 minutes. Let cool on a wire rack and enjoy!
