EVERYTHING YOU’LL NEED TO MAKE THIS goji berry “dump cake”
- Almond Flour: be sure to pack your almond flour when making these! Almond flour will provide a rich moisture to these cookies so I do not recommend subbing this for any other flour. It is also a low glycemic index food and even has fewer sugars and carbohydrates when compared to whole wheat flour.
- Baking Staples: don’t forget the baking powder, baking soda and salt. These are gonna help our “dump cake” to cook properly.
- Milk: feel free to use your milk of choice! My husband and I personally use either 2% or whole milk.
- Honey: a staple in the Wong household. We tend to avoid adding processed sugars to dishes if we can help it and substitute it for honey instead. Honey is mineral rich and lower on the glycemic index.
- Butter: believe it or not butter is actually a healthy fat! Butter is high in fat-soluble vitamins, including vitamins A, E, and K. Vitamin K is an essential nutrient for helping the body absorb calcium!
- Unsweetened Shredded Coconut: coconut adds so much depth and flavor to this “dump cake”! It’s also really good for you in that it is high in vitamins and minerals!
- Chocolate Chips: provide that melty goodness when it’s fresh out of the oven!
- Goji Berries: are in either the health section or dried fruits section in grocery stores. These delicate berries are so perishable that you will rarely find them fresh. They are also full of vitamins & minerals!
Goji Berry “Dump Cake”
Goji Berry “Dump Cake” is an easy-to-make, delightful dessert that combines nutritional benefits and indulgent cravings to create a perfect choice for a quick, crowd-pleasing dessert.
Ingredients
Dry
- 2 cup almond flour, packed
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 1 pinch salt
Wet
- 1.5 cup milk of choice
- 1/3 cup honey
- 1/4 cup butter, melted
- 1 tsp vanilla
- 2 tsp apple cider vinegar optional
Mix-Ins
- 1/4 cup unsweetened shredded coconut + additional for topping
- 1/2 cup chocolate chips
- 1/2 cup goji berries
Instructions
- Preheat your oven to 350°F and grease an 8″x8″ brownie pan.
- Combine your almond flour, baking powder, baking soda and salt in a large bowl.
- In a separate bowl, combine your milk, honey, butter, vanilla and apple cider vinegar (if using).
- Pour the wet ingredients into the dry and stir until just combined.
- Fold in your coconut, chocolate chips and goji berries. Then pour your batter into the greased brownie pan and top with additional coconut.
- Bake for 40-45 minutes or until golden on top. Top with ice cream and enjoy!
