Add your pineapple, honey and water to a sauce pan. Bring to a boil, then reduce heat and simmer for 10 minutes.
Once done, strain your liquid into a container using a mesh strainer. Eat the pineapple your strain out (it tastes like candy it's SO good!!). This stores up to 2 weeks in the fridge.
Assembly
Add ice to your glass. Then add 1/4 cup of the pineapple syrup to your glass. Pour sparkling water 2/3 of the glass and give it a stir. Then top with your creamer and give it another gentle stir to combine your creamer into your sparkling water mixture.
