Taco Pie

If you like meat & cheese then this recipe is for you! This is essentially a taco quiche and it's absolutely delicious! Plus it's lazy day approved, meaning if you don't want to prep a lot of ingredients then this is for you! My parents used to make this for me all the time when I was growing up and something about a meal in a cast iron just feels homey!

Ingredients  

  • 1 lb ground beef
  • 1 small yellow onion, chopped
  • 1 package taco seasoning
  • 1 (7oz) can chopped green chilies, drained
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • pinch of salt
  • 1 Tbsp butter
  • 3 eggs
  • 2 tomatoes, sliced
  • cheddar cheese

Toppings (optional)

  • cheddar cheese
  • lettuce
  • yogurt or sour cream

Instructions 

  • Heat oven to 400F. Grease a 10 inch cast iron skillet. 
  • Cook beef and onion until brown, then drain. Stir in seasoning mix. Spread in cast iron skillet and top with chilies.
  • Put your flour, baking powder, and salt into a separate bowl and mix. Cut in your butter and hand mix until you get the feeling of cornmeal. Then add in your milk and eggs and beat.
  • Pour your batter on top of your ground beef and bake for 25minutes.
  • After 25 minutes, top with cheese and tomatoes. Bake an additional 15 minutes. Serve with yogurt or sour cream, shredded cheese, and lettuce. Enjoy!
